Using a combination of thick, mellow soy sauce and curry powder as its base, the aromatic, savoury-sweet tang of turmeric, cumin, black pepper, cinnamon, chilli pepper, orange peel and herbs maximises the sizzling, mouth-watering qualities of each hot pot ingredient. Both hearty and filling, there any many versatile uses for any leftover broth, whether you chose to boil up a tasty curry udon soup or bake it with rice, chicken and melted cheese for curry gratin.
